As a mom of four children with very different tastes I am having a hard time when it comes to dinner. I am not a short order cook, nor do I want to be. Our rule has always been you get what is given to you and you eat it. You don't like it, then you don't eat. I know it sound harsh, but with four kids they would all choose to eat something different if I offered it.
My problem is I am not good at sticking with this, I end up feeling bad that they didn't eat, and I end up giving them something to snack on.
My mom suggested that if they didn't like what was for dinner then I should give them a bowl of cereal. The problem with that is they would eat cereal every meal if I let them, they like it that much.
So I am looking for helpful comments as to what your meal time rules are. Do you let your kids pick and choose? Are you a short order cook? Do you make them eat what ever is served or do you only cook kid friendly meals?
One other thing- chicken is one thing everyone will eat. I like to put skinless, boneless chicken breasts in the crockpot and cook up a bunch for use through out the week. I am looking for some good recipes to make using shredded chicken. If you have a good recipe or know of a good recipe site please pass it on to me.

I have similar issues but I only have to deal with 2 kids. And since they are still relatively young (3.5yrs and 21mo) I will make them what they want most of the time, just so they eat SOMETHING!.
I think once my youngest is around 3 the dinner variety will stop and it will be "eat what you get or don't eat" and try to hold firm.

I know some moms would disagree with me, but Little Miss A has a few favorites that we have in our regular rotation and I make her what she wants, but we do have her try new things occasionally.
We even have a veggie medal, so if she eats all of her veggies she gets a medal and we make a big deal (sometimes, not every time she eats them, so she doesn't expect it each time), and we do silly dances.

I can't help because your dinner dilemma is the same as mine! I only have one child but my SO is also a picky eater. I try to fix healthier meals and they end up going for cereal or frozen pizzas. I finally settled on the rule, if you try what I made and don't like it, you can fix yourself whatever it is you want, and clean it up after.
